A Laboratory Experiment for Measuring Solid–Liquid Mass Transfer Parameters

Abstract
A mass transfer laboratory experiment based on candy dissolution is described. The dissolution of 1–4 spherical pieces of candy was followed spectrophotometrically, and material balances were carried out to calculate the size of solids from absorbance readings at selected times. The differential equation governing the process was solved numerically by a simplified method, and both the mass transfer coefficient and the saturation concentration were calculated by minimization of the sum of deviation squares. The calculated results provided a good interpretation of experimental data. The combination of the experimental procedure and the calculation method described in this article allowed a quantitative assessment on the solid–liquid mass transfer.
